Maple Oat Bread

  • 1 cup of old fashioned oats
  • 1 cup of boiling water
  • 1 pkg of yeast
  • 1/3 cup of warm water
  • 1/2 cup of maple syrup
  • 2 tsp of canola oil
  • 1 1/2 tsp of salt
  • 3 1/2 - 4 cups of flour
  • Topping:
  • 1 egg white, lightly beaten
  • 2 tbsp of oats
DIRECTIONS
  1. In a blender or food processor, cover and process oats for 6-7 seconds or unitl coarsely chopped. Transfer to a small bowl, add boiling water. Let mixture stand unitl cooled to 110*-115*.
  2. In a mixing bowl, dissolve yeast in 1/3 cup warm water, add syrup, oil, salt, oat mixture and 2 cups of flour, beat unitl smooth.
  3. Stir in enough remaing flour to form a soft dough. Turn onto a lightly floured surface, knead until smooth and elastic, about 6-8 minutes.
  4. Place in a greased bowl, turning once to grease top. Cover and let rise ina warm place until doubled, about 1 hour.
  5. Punch down.
  6. Turn onto a lightly floured surface.
  7. Shape into a flattened 9 inch round loaf.
  8. Place in a greased 9 inch round baking dish.
  9. Cover and let rise until doubled, about 45 minutes.
  10. Brush with egg white, sprinkle with oats.
  11. Bake at 350* for 30 - 35 minutes or until golden brown. Remove from pan to cool.
