INDONESIAN PEANUT SAUCE

INGREDIENTS
  • 1/2 cup onion diced
  • 4 cloves of garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 tbsp peanut oil
  • 1 cup low sugar peanut butter
  • 3 tbsp red wine vinegar
  • 1/2 tsp red pepper
  • 1/2 tsp cayenne pepper
  • 1 lime- for juice
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 tbsp green onion, chopped fine
DIRECTIONS
  1. Saute onions, garlic, and ginger in oil over low heat.
  2. Add vinegar, peanut butter, peppers, line juice, and water.
  3. Simmer for 15 minutes but keep stirring so it doesn't burn.
  4. Add salt to taste.
  5. Granish with green onion.
  6. Serve with chicken skewers.
  7. If you like a sweeter sauce, add 1 tsp of honey.
