Healthy Apple Banana Pumpkin Muffins

  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/8 tsp. nutmeg
  • 1 egg
  • 1/2 cup brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 tsp. vanilla
  • 3/4 cup low fat milk
  • 1/2 cup pumpkin puree
  • 1 ripe banana, mashed
  • 1 small apple, peeled, cored and chopped
DIRECTIONS
  1. Preheat oven to 400 and grease a 12-cup muffin tin. Sift together flours, baking powder and soda, salt, cinnamon, cloves and nutmeg.
  2. In a seprarate bowl, beat egg with brown sugar until well combined. Stir in vanilla, milk, applesauce, pumpkin puree, banana and apple.
  3. Pour wet mixture into dry mixture and stir until just combined.
  4. Pour mixture into muffin cups and bake approximately 17 minutes or until a toothpick inserted comes out clean.
