Green Salad with Spiced Walnuts

  • Walnuts:
  • 2 Teaspoons sugar
  • 1 Teaspoon canola oil
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon cumin
  • 1 Cup shelled walnut halves, toasted
  • Salad:
  • 3 Tablespoons olive oil
  • 3 Tablespoons red wine vinegar
  • 2 Teaspoons grated orange zest
  • 2 Tablespoons orange juice
  • Salt and pepper
  • 1 large head red leaf lettuce
  • 2 celery ribs, thinly sliced
  • 1 Granny Smith apple, cored and thinly sliced
  • Salt and pepper
DIRECTIONS
  1. Whisk sugar, olive oil, 2 tablespoon water, salt, cinnamon and cumin in a heated skillet. Add walnuts and toss to coat. Cook over medium-low heat, stirring constantly, until nuts are crisp and slightly glazed, about 3 minutes. Whisk olive oil, vinegar, orange zest and juice in a large bowl then season with salt and pepper. Tear lettuce into large pieces and pile on top. Add celery and apple and toss. Top with walnuts and serve.
