Gluten Free Pork Ragu
INGREDIENTS

  • 2 garlic cloves, crushed
  • 500 g pork mince
  • 1/2 tsp fennel seeds
  • 1/4 tsp dried chilli flakes
  • 1 tbsp chopped fresh parsley or 1 tsp dried
  • 500 g passata
  • salt and pepper
  • 225 g gluten free pasta
  • 225 g broccoli, cut into small florets
  • 50 g fromage frais
DIRECTIONS
  1. Dry fry pork mince on high heat to brown. Add garlic, fennel and chilli flakes and fry for 1 minute
  2. Stir in the passata and seasoning then simmer for 30 minutes
  3. After 15 minutes, cook the pasta in boiling water, adding broccoli in the last 3 minutes. Drain reserving 100 ml of cooking water
  4. Toss the pasta and broccoli with the sauce, then add fromage frais and reserved cooking water and serve immediately

Simple, easy recipe. Pasta is great as it is generally easy to cater for both gluten and non gluten eaters. Just cook the two types of pasta in two saucepans and divide the sauce into both. This is important as gluten free pasta is not only expensive, however also has a different taste than wheat based pasta and many people who are not gluten free find the taste difficult to accept.
