Gluten Free No Syn/Point Vegetable Soup
INGREDIENTS
  • Cooking Time: 20-30 mins (depends how finely you chop the veg)
  • Servings: 4
  • Preparation Time: 15 minutes
  • 2 x 400 g tins chopped tomatoes
  • 8 carrots, chopped
  • 4 small onions, chopped
  • 4 courgettes, chopped
  • 2 gluten free vegetable stock cubes
  • 1 litre water
  • salt and pepper
DIRECTIONS
  1. Place all ingredients into a large pan, cover and cook for 20-30 minutes, or until the vegetables are cooked.

RECIPE BACKSTORY
This recipe is most likely based on a weight watchers one, however fits both slimming world and weight watchers diets as free foods. It is filling and surprisingly tasty. I expected it to be bland. You can however add herbs and spices to your own taste, a bit of chilli would add a nice kick.
