Gluten Free Leftovers soup
INGREDIENTS

  • 200g various vegetable scraps, including stalks of brocoli etc.
  • 1 tablespoon oil
  • 500ml gluten free stock
  • 1 potato, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, sliced or crushed
  • salt and pepper to taste
  • Various spices to taste
DIRECTIONS
  1. Heat oil in pan, add onion and garlic. Fry on a low heat until softened.
  2. Add vegetables, potatoes, stock and spices to taste. Bring to boil and simmer for 20 mins or until vegetables are softened
  3. Liquidise, then season to taste.
  4. Add more water if too thick and serve
RECIPE BACKSTORY
I love this recipe as it gives me a very cheap and delicious lunch. It is always different and freezes well. I change the spices I put in each time. i got the base for this recipe on the internet somewhere.
