Gluten Free Keema Curry
INGREDIENTS

  • 500 g extra lean minced beef
  • 1 onion, finely chopped
  • 2 tablespoons medium curry powder
  • 400 g potatoes, peeled and cut into 2.5cm/1" cubes
  • 200 ml gluten free stock
  • 1 x 400 g can chopped tomatoes
  • salt and pepper
  • 150 g frozen peas
DIRECTIONS
  1. In a large pan, brown the mince and onion for 5 minutes, stirring frequently to break up the mince
  2. Add curry powder and potatoes and fry for 1 min
  3. Pour in stock and tomatoes, season, cover and simmer for 25 min
  4. Mix in peas and cook for 5 mins
RECIPE BACKSTORY
I have used this recipe a lot over the years, however I had forgotten it for a while. It is simple, quick and delicious. You can add more curry powder to taste. Curry powder should not contain wheat in theory, however do check the label as some spice mixes do contain it.
