Gluten Free INDONESIAN CUCUMBER AND SPICY PEANUT SAUCE
INGREDIENTS

  • 125 g smooth peanut butter (however crunchy works fine)
  • 2 tbsp Gluten Free soy sauce
  • Juice of 1 lemon
  • 2 garlic cloves chopped
  • Quarter tsp dried crushed chillies
  • Half teaspoon of sugar
  • 4 tbsp hot water
  • 1 cucumber chopped however you like!
  • Bunch of spring onions, chopped however you like (other onions work too!)
  • Gluten free pasta
DIRECTIONS
  1. 1. Mix peanut butter, soy sauce, lemon juice, garlic, chillies, sugar and water until smooth
  2. 2. Combine with rest of ingredients and stir
  3. 3. Stir into pasta and serve
  4. NB. Most pasta shapes work. Be careful not to overcook gluten free pasta as it isn't as robust as wheat pasta. I suspect it is an acquired taste as well and it is expensive, so you may want to cook a separate pan for gluten eaters, however make sure you keep everything separate.

This was from an old book of pasta recipes. i hadn't used this recipe for ages, however discovered it again a few months ago. it is delicious and quick to prepare. Probably a bit too much peanut butter to be healthy though!
