Farmer's Casserole
INGREDIENTS
  • 1.5 lbs extra lean ham, cut into bitesize pieces
  • 20 oz. seasoned diced potatoes/home fries
  • 4 oz. canned mushroom pieces, drained (I added 8 oz. but I like mushrooms)
  • 10.75 oz. 98% fat-free ceam of mushroom soup (add 1/2 can water)
  • 1/2 cup frozen chopped onion
  • 14.5 oz. green beans, drained
  • salt and pepper
DIRECTIONS
  1. Spray skillet with cooking spray or use margarine. Cook home fries with onions and ham in skillet on med-high heat until golden brown. Add mushrooms and green beans. Cook about 3-5 minutes, or until warm. Then add soup mix and cook until heated through, about 10 minutes.
