Cucumber Daikon salad

INGREDIENTS
  • 2 large cucumbers, peeled and thinly sliced
  • * 1 cup fresh daikon radish, thinly sliced
  • 1/2 cup red onion, thinly sliced
DIRECTIONS
  1. Toss with your favourite vinegarette. (Note: While the red vinegarettes will work for this, they tend to mask the flavour of the cucumber.)
RECIPE BACKSTORY
Cucumbers are such a healthy vegetable with a refreshing crispness and flavour that brightens any meal. Fresh raw daikon radishes add a little kick to this salad, but don't go overboard on flavour. I eat an entire bowl of this salad with a grilled hunk of meat at lunch to have a deliciously filling low carb and gluten free meal.
