Creamy Broccoli Soup
INGREDIENTS
  • Cooking Time: 30 minutes
  • Servings: 4
  • Preparation Time: 15 minutes (+2 hours of soaked cashews)
  • 1 Onion
  • 2 Long Carrots
  • 2 Rustic Potatoes
  • 1 can of corn Corn
  • Veggie Broth
  • Soaked Cashews* (overnight, or at least 2 hours)
  • Nutritional Yeast
  • Salt
  • Pepper
  • Croutons for decoration
  • *Requires an blender, and immersion blender
DIRECTIONS
  1. Add 1 cup of cashews to a bowl with approx. 3/4 cup of water. Allow to soak for at least 2 hours, or overnight for a creamier texture..
  2. Chop and boil the onion, carrots in veggie broth.
  3. Once veggies are boiled and soft, add corn, then blend with the immersion blender.
  4. Add nutritional yeast to taste and simmer. This will add a cheesy flavour to the soup.
  5. Blend the soaked cashews and add to the soup.
  6. Salt and pepper to taste.
