Chickpea Cauliflower Mash
INGREDIENTS
  • Cooking Time: 10-15
  • Servings: 6
  • Preparation Time: 20
  • 1 cauliflower head - cut into florets (approx. 3 cups)
  • 1 can chickpeas - 19 oz. drained and rinsed
  • 2 garlic cloves - cut in half
  • 3 tbsp. chopped fresh parsley
  • 2 tbsp. chopped fresh chives
  • 1/4 cup olive oil
  • salt and fresh ground pepper to taste
DIRECTIONS
  1. Bring pot of water to boil
  2. Add cauliflower, chickpeas and garlic
  3. Boil for 10 - 15 minutes
  4. Drain and transfer contents to food processor
  5. Add parsley, chives and olive oil and process
  6. Season with salt and pepper to taste
