Banana and Chocolate Chip Muffins

INGREDIENTS
  • 1/4 C sour cream
  • 1 t. baking soda
  • 1/2 C butter, softened
  • 1 egg
  • 3/4 C sugar
  • 1 1/2 C flour
  • 1/4 C wheat germ [optional]
  • salt
  • 1 C mashed bananas
  • 1 C semi-sweet Chocolate chips
  • 1 t. vanilla
DIRECTIONS
  1. Preheat the oven to 350. Stir sour cream and soda together. Set aside. Cream butter with sugar until light and fluffy. Add egg, beating well. Beat in sour cream mixture. Stir in remaining ingredients. Don't over-mix. Spoon into greased muffin pans and bake for about 18 minutes. Let cool before removing from pan
