South African Cowboy Dish

Why I Love This Recipe
This is an extremely easy dish to make for those days when you are absolutely NOT in the mood for cooking, it is cheap and fast. My colleague Mary Buss gave it to me about twelve years ago and it has never flopped. You can add or omit anything to taste. Omit the sausage for vegetarian variety.
Ingredients You'll Need
Three Potatoes
One onion
One tomatoe
400 gram "boerewors" (any type of sausage -beef or pork)
Cupfull of sliced Mushrooms
One tin Baked beans
Two teaspoons Mixed herbs,
Salt and pepper to taste
Cupfull of frozen mixed vegatables.
Directions
Peal and cut potatoes into thin slices
Peal and cut onion into small cubes
Cut tomatoe into squares
Sutee onion in a small amount of olive oil, add sausage, mushroom and tomatoe and fry untill sausage almost done - then cut into 1 inch size pieces,
Add potatoes and add enough water (not too much water) to allow potatoes to simmer untill tender,
Allow most of the water to cook away, then add baked beans and frozen vegatables and allow to simmer (medium temperature) for a couple of minutes until frozen veggies are cooked - do not let it cook too long as the potatoes and the baked beans will get stuck to the bottom.
