Peas & Fenugreek Cream Curry

"A delicious curry with peas and fresh fenugreek simmered in an aromatic cream and cashew gravy"

Why I Love This Recipe

This is one of my favourite Indian recipes, it is incredibly aromatic because of the use of whole spices. The slightly bitter flavour of the fresh fenugreek is perfectly balanced with the sweetness of the cashews and cream, serve with roti or basmati rice and it's the food heaven.


Ingredients You'll Need

Peas
Fresh fenugreek leaves
Cream
Cashew nuts
Onion
Garlic
Green chilli
Ginger
Cumin seeds
Whole spices: cinnamon, black peppercorns, cloves, cardamom pods
Garam masala powder
Salt to taste
Oil


Directions

Heat up oil in a pan and add the whole spices, allow to get aromatic


Add garlic, ginger and green chilli, cook for 1 minute


Add onions and cook until soft


Remove sauteed vegetables into a grinder jar, add the cashew nuts and blend until smooth


Heat up oil in a pan, when hot add cumin seeds and allow them to splutter


Add now the cashew onion paste, cook until thick always stirring


Add salt and garam masala


Add the peas and fenugreek and cook for 1 minute, coating the vegetables


Add water and simmer until the peas are cooked


Add cream cook for 1 or 2 minutes and serve


Pairs Well With

Basmati Rice or Roti
