Why I Love This Recipe

Brown Sauce


Ingredients You'll Need

1/4 Cup butter
1/4 cup flour
2 Cups broth (beef)
Celery leaves or flakes


Directions

Melt butter and blend


smoothly with flour. Gradually


add broth, stirring constantly


until smooth. Add sereral celery leaves or flakes. Put in


meatballs and simmer gently


to heat through. Remove and


discard celery leaves before


serving.


Yield: 6 servings


Cream gravy # 3


3 Tbls. butter


1/2 Cup flour


3 Cups beef stock


1 Cup cream


salt and pepper


Melt butter and add flour,


stirring to golden paste.


Add stock gradually,


stirring briskly to avoid


lumps. Add cream and


season to taste with salt


and pepper. Simmer 4 - 5


minutes. Add meatballs and


let cook in gravy over


low heat for 40 minutes.


Yield: 8 - 10 servings
