Why I Love This Recipe

An easy morning breakfast just isn’t complete without a bowl of healthy homemade granola. Just the word granola can put a smile on my face. It’s such a simple down to earth treat that you can’t help but love!

What I love about this healthy homemade maple pecan granola is that it can play both the lead and supporting role for any meal or snack. This homemade granola can take centre stage with a bowl of milk or compliment yoghurt, ice cream or smoothie bowls. Throw it in a bag and you have a healthy homemade granola snack to go. Seriously, it’s the perfect versatile treat.

Granola has a pretty good reputation as a healthy alternative to sugary breakfast cereals, but don’t be fooled by the marketing labels. Packaged granola is often loaded with refined sugar, vegetable oil and highly processed. Yes, it is delicious but void of many essential nutrients. This homemade granola is a healthy alternative that is surprisingly easy to make. We swap out the refined sugar for pure maple syrup and the vegetable oil (which contribute to the overload of omega-6s in our diets) for coconut oil. Add some pecans, coconut and flax and you’ve got a heart-healthy, energy boosting, skin glowing treat.

Ingredients You'll Need

3 cups old fashioned oats
¾ cup chopped pecans
½ cup shredded unsweetened coconut
½ cup whole wheat flour
¼ cup flax seeds
½ tsp salt
1 tsp cinnamon
½ cup maple syrup
¾ cup coconut oil (melted)
1 tsp vanilla extract


Directions

Preheat oven to 300.
In a large bowl, mix the oats, pecans, coconut, flax seeds, whole wheat flour, salt, and cinnamon together.
In a separate bowl, mix the coconut oil, maple syrup and vanilla extract.
Add the liquid mixture to the dry mixture and stir until combined.
Line a baking sheet (or 2) and spread the granola out as a thin, even layer. Be careful of loose bits at the edges as they could burn.
Bake at 300 for 25 minutes. Gently stir after 15 minutes, then return to bake for the remaining 10 minutes.
Let cool completely before breaking apart. You should have a mix of small and large clusters.
Store in an airtight container for 4 weeks (although I doubt it will last that long).
