Why I Love This Recipe

Since the kids already get homework help and had plenty of things they would eat, she focused on just finding something she and I would enjoy and, after shopping around a bit, wound up buying a box of Eggo Biscuit Scramblers (egg and bacon flavored).

For those of you who have not seen this product, it is similar to several other breakfast products out there. You have a biscuit and, inside the biscuit is eggs, bacon, etc. This, of course, gives you the equivalent of a full breakfast but you can hold it in your hand and even eat it while walking around.

To be honest with you, when I first saw these, I wasn’t really all that thrilled about the purchase. I have had most of the similar items in the past and many of them (especially one from the IHOP brand) weren’t that good. And, I figured there wasn’t going to be much of a difference with this brand.

However, as it turns out, I didn’t hate these.

I won’t say they were the best breakfast I have ever had because I have had better. But, the Biscuit Scramblers were still pretty decent (especially since they were cheaper than some of the other products I mentioned before). The eggs/bacon seemed to have a better taste to them than with other products. The eggs, for example, didn’t have the same rubbery feel to them that most frozen eggs have and there was enough bacon to give the sandwich a bit more bite.

I also liked the fact these were a pretty filling breakfast. They didn’t look like they would be at first since the scramblers were a bit on the small side and I figured I would have to eat at least two of them to feel full. But, I was satisfied after just one.

If I have any complaints about this product, it would be the biscuit itself. That seemed to be a bit harder and dryer than I normally prefer and that did bring my overall opinion of these down a little bit. However, overall, I do feel this was a good purchase. As I said before, they weren’t the best breakfast I have ever had. But, I did enjoy them enough to want to buy them again in the future.


Ingredients You'll Need

6 1/2 cup of all purpouse gluten-free rice flour
1/2 cup potato starch
1 tablespoon Guar gum
2 packages active dry yeast gluten-free
3 tablespoon sugar
2 1/2 cups warm water 110 degree F 45 degrees C
3 tablespoon vegetable lard
1 tablespoon salt


Directions

In a large bowl combine the dry ingredients, dissolve yeast and sugar in warm water, stir in the remaining flour, ½ cup at a time.


Beating well after each addition. When the dough is pull together, turn it onto a light floured surface and knead until smooth and elastic about 8 minutes.


Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with damp cloth and let rise in a warm place until doubled in volume, about 1 hour.


Deflate the dough and turn it out a lightly floured surface. Divide the dough into two equal pieces and form into loaves.


Place the loaves into two lightly greased 9×5 inch loaf pans or the traditional French loaf. Cover the loaves with a dump cloth and let rise until doubled in volume, about 40 minutes.


Preheat oven to 425 degrees f (220 degree C). Bake at 375 degree F (190 degree C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sound when tapped.


With the same principal for the biscuits just get one of the loaves and divide then in little equal parts and the you can brag a bout how hard the biscuits are to make enjoy your healthy new living
