Why I Love This Recipe

Chicken Fried Rice is a classic, tasty dish that is easy to prepare and one the whole family can enjoy. In this recipe, the entire dish is prepared in a wok, although a skillet could work as well. Although there are numerous variations of the Asian favorite, this recipe makes a standard dish that yields about 6 servings. Fried rice is a staple of American Chinese cuisine and can be found in just about every Chinese restaurant in platinum play online casino, as well as many Japanese and Thai restaurants.


Ingredients You'll Need

1 boneless, skinless chicken breast, diced into 1 1/2-inch pieces
6 tablespoons soy sauce
2 tablespoons dark sesame oil
2 teaspoons rice wine
2 tablespoons cooking oil
2 large eggs
1/4 cup yellow onion, finely chopped
4 or 5 scallions, chopped
1/2 cup carrots, peeled and diced
1/2 cup fresh peas, rinsed well and patted dry
5 cups cooked long-grain white rice


Directions

Place diced chicken in a large mixing bowl. Pour 2 tablespoons soy sauce, 1 tablespoon sesame oil and 1 teaspoon rice wine over the chicken and toss gently to combine. Cover bowl with a piece of plastic wrap, transfer to refrigerator and allow chicken to marinate in the liquid for 15 to 20 minutes.


Place wok over high heat and add 1 tablespoon cooking oil. When oil is hot, add eggs and cook, scrambling the eggs for 2 to 3 minutes. Transfer eggs to a separate bowl and set aside.


Return wok to high heat and add 1 tablespoon cooking oil. When oil is hot, add marinated chicken. Cook chicken for 2 to 3 minutes, then add onion, scallions, carrots and peas to wok. Cook vegetables and chicken for 4 to 5 minutes.


Just before chicken and vegetables are fully cooked, add the cooked rice, 4 tablespoons soy sauce, 1 tablespoon sesame oil, 1 teaspoon rice wine and cooked eggs to wok.


Toss all ingredients together in the wok and continue stirring the mixture until the chicken and vegetables are fully cooked, about 2 minutes more.


Pairs Well With

Serve this dish in a large bowl or mounded on a large platter. Chicken Fried Rice can be incorporated into dinner as a main or side dish.
