CHICKPEA A LA KINGTakeout isn’t the only option when you’re tired and hungry at 5 p.m. “Cooking on the Go” is the answer to healthy weekday meals in a hurry. I’m talking 30 minutes or less. Honest! Most of us–even if we’re retired–have busy schedules and not enough time to spend in the kitchen. Even a food blogger and cooking club coordinator like myself can’t always be in the kitchen. So we need shortcuts and we need ’em fast! My New Start Cooking Club presented a “Cooking on the Go” class–featuring recipes that were quick and easy. I think it’s been our favorite class yet. We always get good raves from our club members but everyone said this was our best yet! It was partly the great flavors but it sure appealed to our busy friends. I hope it will appeal to you too.
TUSCAN CANNELLINI SOUPEating soup a couple of times a week is a great boost for your health. Scientists from Tufts University discovered that people who ate vegetable soup twice a day had lower amounts of stress-related molecules in their blood after just 7 days! This was because vegetable soup is high in vitamin C.
GOLDEN RED LENTIL SOUPI like to fill up with this creamy soup to kick-start my health. Packed with high antioxidant power using butternut squash, carrots and red lentils. This could become your next comfort food. Red lentils are one of my favorite bean soups. They are an excellent source of plant protein that can be used in wide variety of meals. Use them in a pilaf or vegetable lasagna. You can also puree cooked lentils in a blender for a tasty dip for vegetables and baked chips.
CHICKPEA NOODLE SOUPPower up all year round with a bowl of warm soup. Or use this to strengthen your immune system this fall and winter. Adding whole grain pasta makes this a one-dish meal with beans and vegetables. Can soups help you lose weight? A recent study in the British Journal of Nutrition found that soup eaters tend to weigh less and have smaller waistlines than those who don’t eat soup.

One of the musts for any recipe I share with my cooking club must be bursting with good health but I want it to be budget friendly and easy to make. That’s why I love Instant Pot cooking. It’s not just that it takes less time but it is so much easier. Plus, I don’t have to hover over the stove. I can fill the pot with my recipe and walk away to work on something else. Perfect for this busy cooking coach. This time of year can be pretty crazy around our house. The weather is getting colder and we don’t have long before the ground will be frozen. So this week, we’ve been busy getting in the last harvest from the garden. We have a nice haul of butternut squash and sweet potatoes. Two of my favorite orange veggies. So I decided to pair them up in a luscious soup for today’s lunch.
IRISH CABBAGE STEWSail across the Pond, as they say in the United Kingdom, for a little taste of Ireland. There’s nothing but good old-fashioned warmth in this soup. Filled with the vegetables eaten together in Ireland for centuries—cabbage and potatoes. A satisfying meal, guaranteed to fill you up and keep you coming back for more. This is a slow-cooker recipe.
HEALTH BITES MINESTRONEIn Italian, ‘minestrone’ means a thick, vegetable soup. It is usually made of whatever vegetables are in season. However, some Italian chefs say that the classic minestrone must be based on a bean broth. And the barlotti (which we would call cranberry beans) are the beans to use for genuine minestrone soup. I love this bean, and if you are lucky enough to have it in your garden or at a store near you, I hope you will use it. It is the creamiest and sweetest bean around. But if not, use the beans you have on hand and you will still have a delicious minestrone.
PORTOBELLO STEWThis is a 5 star stew at our cooking club. Loved by moms, dad's, kids and teens. Everyone wanted seconds! It's also a great way to add mushrooms into your diet. Did you know they pack some pretty amazing perks? Mushrooms contain some specialized lectins that recognize cancer cells and prevent them from growing and dividing. Make them part of your defense team for cancer protection!
SWEET POTATO STEWI am always looking for new ways to use sweet potatoes in my dishes. It’s a delicious root that will help you thrive. They are naturally sweet and will not cause blood sugar spikes, helping you to have a steady and balanced source of energy all day long. Think orange and yellow plant foods for giving your health a big boost.
