Mom’s homemade potato soup. Since most potato soup recipes have other additives like chicken stock, etc., I suspect that this is a Depression Era recipe, where you made soups and other meals out of what you had, not what would be nice.

Served with parsley potatoes, kidney beans and cornbread, this is Bubba’s favorite meal. Recipes for the parsley potatoes and cornbread are found in this book. BUBBA is Hilary’s family nickname. Probably another Depression Era recipe. This is what you did with lettuce that was beginning to wilt and turn.

My grandmother, Pearl, had to make the vanilla pudding from scratch. Through later generations Jello developed cooked vanilla pudding that was very good and then developed instant vanilla pudding, also great. Us lazier generations use the pudding mix.

Turtle CandyThe first time I saw this candy made at home, the baker placed a Kraft caramel on top of three pecan halves, placed it in the oven until the caramel melted, then placed chocolate chips on top of the caramel and returned it to the oven if necessary, to melt the chocolate. The problem with this approach is that the caramel very quickly gets very uncomfortably hard.. I modified the recipe to make the caramel softer and to make production easier. Hilary House

I have heard that Famous Amos, when asked where he got his chocolate chip cookie recipe, stated that it was printed on the package of Toll House Chocolate Chips. "I just doubled the amount of chocolate chips in the recipe." I took a hint from Amos!

Passed down through 4 generations: I drain the olive oil off of the pimentos before adding them, Bettye, my sister, does not. I like her version just as well as mine. There are many different type of pimento cheese from the south. Many use grated or ground cheddar cheese. But, this is the one I grew up with and still love today.

This is Hazel's family recipe which Bettye modified to take advantage of modern appliances and it was a blessing for me as my difficulty in swallowing progressed. Fran House's version is also much appreciated by all. Additionally daughter, Stacy McKay,, who does not like to squish raw ground meat with her hands, came up with the method of using her mixer and dough hooks to mix the meatloaf. This has caught on in the family and is now the accepted way to mix the meatloaf.

Back when this pie was invented, there were no cows or stores on the Florida Keys. Everything had to come in by boat and so they used canned sweetened condensed milk, just like this recipe. They added meringue to use up the leftover egg whites. You may do that also, and then brown the meringue in the oven. This recipe was probably the inspiration for the Lemon Ice Box Pie, later called Lemon Meringue Pie.
